すすきので燻製専門店「おず」を営んでいるオーナーが、豊平区に全く新しいコンセプトのスイーツショップSMOKE LAB.をオープンさせました。燻製されたケーキや焼き菓子は新感覚のスイーツです。 ここを拠点に燻製を極めるべく研究所（LAB.）と位置づけ、様々な試みを続けるお店SMOKE LABの今後の展開が楽しみです。

Smoke Lab is a specialty restaurant situated in the Toyohira area in Sapporo which serves various types of smoked food including smoked cakes and smoked cookies. Ambient’s main concept was to make the place reminiscent of a manufacturing laboratory developing a new type of “smoked food”.

スイーツショップの雰囲気と研究所の雰囲気を融合するようなデザイン、かつ、「おず」の魔法使いにキャラクター「ブリキの木こり」をイメージしたデザインで空間を構成しました。 スイーツショップの温かい雰囲気の中に、厨房はラオのような真剣に食材と煙（燻製）に向き合える空間、そしてブリキの木こりの出で立ちのようなインダストリアルなテクスチャーをミックスしたデザインは 新しいカテゴリの燻製スイーツを販売するに相応しい場所になったと考えます。

The kitchen has a serious manufacturing laboratory appearance which is contrasted by the warm atmosphere of the sweets section. In addition, the restaurant is reinforced by colourful images and fabric which features the Wizard of Oz character “Tin Man”. Ambient ensured that the new type of smoked food are well- presented.
